Ingredients
- 2 large onions, cut into very thin rings
- 820 g tomatoes, canned or fresh, chopped
- 1 tbsp basil, fresh chopped
- 1 tsp mixed dried herbs
- 3 garlic cloves, crushed
- 1 cup of Greek feta, cut into small cubes
- Salt and ground black pepper to taste
Method
- Separate onion rings and place in casserole dish.
- Mix basil and mixed herbs with tomatoes and combine with feta, then place on top of onions.
- Bake casserole in a moderate oven for about 40 minutes until onion is tender.
