Sweet potato brownies

 

Super easy and delicious, these sweet potato brownies are high in protein, beta-carotene and potassium to promote satiety, curb cravings, promote healthy skin and mucous membranes and move nutrients into cells.

Ingredients

  • 1 medium sweet potato, steamed and mashed
  • 3 free-range or organic eggs
  • ½ cup coconut oil, melted
  • 2 tbsp Nature Sweet
  • 1/3 cup Synd-X protein powder
  • 2 tsp vanilla essence
  • ½ cup cacao powder
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 3 ½ tbsp almond meal
  • 1 banana, mashed

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Combine sweet potato, eggs, vanilla essence, Nature Sweet, protein powder, banana and coconut oil in a mixing bowl, stirring until well combined.
  3. Then add cacao powder, baking powder, baking soda and almond meal and stir.
  4. Once well combined, place mixture into a baking tray lined with baking paper.
  5. Cook for 25-30 minutes, or until fork comes out clean. Remove from oven, allowing to cool for 5-10 minutes.
  6. Carefully remove from tray and cut into squares. Store in fridge or freezer for optimal freshness.
