This is a super yummy salad – I love salads all year round! The strawberries give the salad a sweet lovely taste amongst the healthy greens combined with the creamy texture of the cheese and a crunchy texture from the lightly toasted nuts. ENJOY!

Serves: 4 

½ cup of macadamias

1 punnet (250g) of fresh strawberries

100g spinach and rocket leaves

2 kale leaves, finely sliced

Bunch of continental parsley, finely chopped

3 shallots, chopped

½ green capsicum, chopped

½ red capsicum, chopped

100g of goat’s cheese

 

Dressing:

2 Tablespoons balsamic vinegar (can use caramelised if you want a sweeter salad)

2 Tablespoons of olive oil

Sea salt and pepper to taste

 

Lightly toast macadamia nuts.

Wash and chop strawberries into quarters.

Finely slice kale and remove stems (can keep these for a cooked meal or juice to add extra nutrients).

Add all the salad ingredients into a bowl.

Combine dressing ingredients – dress as you like (you may want more or less dressing)
