Raw Lamington Bars
These raw lamington bars are raw, delicious and easy to make. Traditional lamingtons rely on flour and sugar as their primary ingredients whereas this recipe utilises cashews, protein powder and dates for a wholefood, high protein, high fibre and refined sugar-free alternative.

Ingredients
- 1 cup medjool dates
- 1/2 cup raw cashews
- 1/4 cup Synd-X protein powder
- 1/4 cup desiccated coconut
- 1 tbsp raw cacao powder
Method
- Line a loaf pan or small square pan with baking paper.
- Add all ingredients to a food processor, blending until everything is combined and broken up.
- Add mixture to pan, pressing down evenly into corners with your hands or a tablespoon to ensure top is flat, even and compressed.
- Leave in fridge for an hour minimum to set. Once firm, remove from fridge and cut into 8 bars with a sharp knife. Store in an airtight container in fridge for up to 7 days.
