(GF, DF, SF, NF)

Serves 6

500g Pumpkin, peeled and cut into chunks
125g Potato, peeled and cut into chunks
1 Large onion, thinly sliced
1 cup Vegetable stock
½ cup Fresh parsley, chopped
Sea salt and cracked black pepper to taste

You may like to serve soup with a small amount of cream to garnish along with a little fresh parsley

 

Place all ingredients in a large pan and barely cover with water.

Simmer until tender with the lid on for approximately 30 – 45 minutes.

Season to taste and place ingredients in a blender and puree.
