Pumpkin quinoa arancini balls
These golden balls of goodness will give you a nice energy boost.

Ingredients
- ¼ butternut pumpkin, roasted
- ½ small sweet potato, roasted
- 2 eggs, beaten
- 4 garlic cloves, crushed
- 1 cup shallots, diced
- ¼ cup basil, chopped
- ¼ cup parsley, chopped
- 2 tbsp nutritional yeast
- ¾ cup almond meal + extra for coating
- 2 cups quinoa, cooked
- 2 tbsp olive oil
- 1 tsp paprika
Method
- Preheat oven to 160°C and line a baking tray.
- Mash the sweet potato and pumpkin together (or put in a food processor) and combine.
- Mix through all other ingredients (excluding oil) until combined.
- Spoon 2 tbsp of mixture at a time and roll into balls. Roll into additional almond meal to coat.
- Place balls on baking tray, drizzle with oil and bake in the oven for about 20 minutes or until golden brown.
- Allow to cool and store in an airtight container.
