Ingredients
- 1 cup ground pecans
- ½ cup freshly grated parmesan cheese
- 4 chicken breast halves
- 2 tbsp olive oil
- 1 tbsp butter
- ½ tsp ground coriander
- 1 clove garlic, finely minced (optional)
- ¼ cup lemon juice
- Sea salt and black pepper to taste
Method
- Pound the chicken breasts with a meat mallet to make them an even thickness.
- Place the ground pecans, cheese, coriander, garlic, salt and pepper in a shallow bowl. Put the lemon juice into another shallow bowl.
- Dip both sides of the chicken breasts in lemon juice then coat in pecan mixture.
- Heat the olive oil and butter in a large frying pan on medium heat. Cook the chicken until golden brown (approximately 3 to 5 minutes on each side).
- Serve with a salad or cooked vegetables.
