Orange and coconut cookies

These orange and coconut cookies are perfect for afternoon tea but also work well in a lunchbox for the kids.

Ingredients

  • 1 tbsp tahini
  • ¼ cup coconut oil, cold pressed
  • ¼ cup Nature Sweet Natural Sugar Substitute
  • 1 large egg, beaten
  • 2 tbsp orange juice
  • 1 tsp orange rind, grated
  • 1½ cups gluten free SR flour
  • ½ cup shredded coconut
  • 1¼ cups LSA – linseeds, sunflower seeds and almonds

Method

  1. Preheat oven to 180°C and line a baking tray.
  2. Mix tahini, oil and sweetener together until smooth.
  3. Stir in beaten egg, juice and rind.Add coconut, LSA and flour and combine all together.
  4. Roll teaspoonful of mixure into a ball and then flatten on tray.
  5. Bake for 12 – 15 minutes, until golden brown.
