Orange and coconut cookies
These orange and coconut cookies are perfect for afternoon tea but also work well in a lunchbox for the kids.

Ingredients
- 1 tbsp tahini
- ¼ cup coconut oil, cold pressed
- ¼ cup Nature Sweet Natural Sugar Substitute
- 1 large egg, beaten
- 2 tbsp orange juice
- 1 tsp orange rind, grated
- 1½ cups gluten free SR flour
- ½ cup shredded coconut
- 1¼ cups LSA – linseeds, sunflower seeds and almonds
Method
- Preheat oven to 180°C and line a baking tray.
- Mix tahini, oil and sweetener together until smooth.
- Stir in beaten egg, juice and rind.Add coconut, LSA and flour and combine all together.
- Roll teaspoonful of mixure into a ball and then flatten on tray.
- Bake for 12 – 15 minutes, until golden brown.
