Nutty lemon bliss balls
Containing just six ingredients, these bliss balls are not only super easy and delicious, they are also healthy to boot.
Make 20 balls
Ingredients
- 15 Medjool dates, seeds removed
- 1 ½ cups, raw cashews
- 1 ½ cups, raw almonds
- ½ cup desiccated coconut (unsweetened)
- 1 tsp lemon zest
- Juice of 1 lemon
Method
- Add all ingredients to a food processor, processing for 1-2 minutes, stopping to scrape the sides when needed until everything is well combined in a sticky mixture.
- Transfer the mixture to a bowl. Add a few tablespoons of extra desiccated coconut onto a separate plate. Slightly wet hands and use a tablespoon to form approx. 15 small balls, applying coconut evenly on all sides.
- Store in an airtight container in the fridge for up to 2 weeks.
