Lemon macadamia balls
These lemon macadamia balls make for a great afternoon snack or lunch box treat. Macadamias are a good source of vitamin E, offer cardiovascular benefits and can help to curb appetite.

Ingredients
- ¾ cup macadamia nuts
- 1 cup desiccated coconut
- Juice and zest from ½ fresh lemon (can add more zest for a stronger lemon flavour)
- ½ tsp vanilla extract
- Pinch of Himalayan or sea salt
- 2 scoops Synd X Slimming protein powder
- 2 tbsp coconut flour
- 1.5 tsp Nature Sweet
- 3 tbsp coconut oil
- Extra coconut for coating balls
Method
- Process macadamia nuts in food processor.
- Add the rest of the ingredients except the extra coconut for coating into the food processor until well combined and consistent. This mix should form a nice size ball.
- Take a tablespoon of the mixture and roll it into a ball and coat in the extra coconut.
- Place the balls in the fridge or freezer for a few hours.
- Store in an airtight container in fridge or freezer.
Note: You can use a dairy-free protein powder such as Ultimate Superfood or extra coconut flour.
