Ingredients
- 2 bunches broccolini
- 2 bunches asparagus
- 150 g sugar snap peas
- 1 handful baby spinach
- ¼ cup almonds
Dressing
- 2 tsp olive oil, cold pressed
- 1 tsp lemon rind, grated
- 1 tbsp fresh lemon juice
Method
- Place olive oil, lemon rind and lemon juice in a glass jar with a lid and shake to combine.
- Lightly roast or dry fry the almonds over medium heat.
- Steam the broccolini, asparagus and sugar snap peas for 1 minute. Place the steamed vegetables on a serving platter.
- Top with the roasted almonds and then drizzle the lemon dressing over the vegetables.
