Garlic parmesan flaxseed crackers

Conventional crackers you buy from the grocery store are very refined and have little nutritional value. These garlic parmesan flaxseed crackers contain only a few ingredients and are a healthy, low carb, high fibre alternative. As an added bonus, they taste great! You can add in additional herbs and spices such as chilli and paprika for a flavour variation. Eat by themselves or with your favourite dip.

Ingredients

  • 1 cup flaxseed meal
  • 1/3 cup parmesan cheese, grated
  • 2 tsp garlic powder
  • ½ tsp salt
  • ½ tsp dried herbs
  • ½ cup water
  • Extra seeds of choice to top (flax, chia, sesame)

Method

  1. Preheat oven to 200ºC and line and grease baking tray.
  2. Mix all ingredients together and spread evenly over tray using a spatula. It should be thin, less than 1/2 cm thick.
  3. Sprinkle with seeds and score dough with a knife in both directions to create cracker sized squares.
  4. Bake for about 15 minutes. Remove and cut completely through the crackers (where you previously scored the dough) and place back in the oven for a few minutes to brown the edges. Careful not to leave them in too long or they will burn.
  5. Remove from oven and allow to cool completely before transferring to an airtight container.
