Eggplant pizza
Utilising eggplant as a pizza base, this delicious recipe is a healthy, low carb alternative to a traditional pizza.

Ingredients
- 1 large eggplant
- 2 tbsp tomato paste
- 2 tsp dried herbs
- 1 garlic clove, crushed
- 1 tomato, diced
- ½ red onion, peeled and diced
- Handful mozzarella
- ½ tsp salt
- 4 mushrooms, sliced
Method
- Preheat oven to 190’C and line a baking tray.
- Slice eggplant either lengthwise for larger pizza slices, or horizontally for mini pizzas, 2cm thick.
- Sprinkle the eggplant slices with salt on both sizes, place on a tray and bake in the oven for about 20 minutes.
- In the meantime, mix the tomato paste, garlic and herbs together.
- Remove from oven and smear the eggplant slices with the tomato paste mix.
- Top with diced tomato, red onion and mushrooms, and finish with the mozzarella.
- Place in the oven for about 5 minutes.
