Ingredients
- 2 cups cabbage (green or red), shredded finely
- ¼ cup milk
- 100 g sweet potatoes, diced
- 150 g potatoes, diced
- 2 spring onion, chopped
- 1 tsp nutmeg, freshly grated
- 2 tbsp butter, melted
- ½ organic vegetable stock cube
- ½ cup water
Method
- Steam cabbage in steamer until tender.
- In another saucepan, heat milk, water, nutmeg and stock cube and add diced potato, sweet potato and onion. Cook covered on low heat until soft. Roughly mash.
- Add cabbage and mix well. Drizzle with butter and top with chives. Serve immediately.
