Coconut caramel bites
These coconut caramel bites are great for a bite-size snack for you or your kids and they are naturally sweet and tasty. They are low allergen, gluten free, nut free, egg free, sugar free, dairy free and super easy!

Ingredients
- 2 cups dried coconut
- 1 tbsp coconut flour
- 12 fresh dates, pits removed
- 4 tsp natural vanilla extract
- ½ tsp sea salt
Method
- Add all the ingredients to a food processor until well combined and consistent. This mix should form a nice size ball.
- You can either take a tablespoon of the mixture and roll it into a small ball and repeat until all the mixture is gone or place the mixture between 2 sheets of baking paper and roll flat with a rolling pin then press into a slice tin.
- Place tin or balls in the fridge or freezer for a few hours or overnight.
- Cut into bite size pieces from the tin if not in balls.
