Chocolate granola protein clusters

This chocolate granola protein clusters recipe serves as the perfect breakfast or snack option for all the cereal lovers and sweet tooths out there. It is free from gluten, grains and refined sugar and uses nuts, seeds and quinoa flakes instead of grains, making it higher in protein and fat to help stabilise blood sugar levels and keep you fuller for longer. You can swap around the ingredients depending on your tastes and what you have in your pantry.

Ingredients

  • 1 cup of mixed nuts, chopped (pecans, walnuts, almonds, brazil nuts)
  • 1 cup of mixed seeds (sesame, pepitas, sunflower, chia)
  • ½ cup quinoa flakes
  • 1 tsp cinnamon / nutmeg
  • ½ cup cacao powder
  • ½ cup Synd-X protein powder
  • 2 cups of shredded coconut
  • ¼ cup honey
  • 1/3 cup coconut oil, melted
  • 5 pitted dates, finely chopped (optional)

Method

  1. Preheat oven to 120°C and line or grease a baking tray.
  2. Combine all ingredients (excluding dates) in a large mixing bowl until everything is evenly mixed and all ingredients are lathered in coconut oil.
  3. Spread mix evenly onto the baking tray, bake in the oven for about 15 minutes, or until brown and crunchy. Turning the tray half way will result in a more even batch.
  4. Allow to cool and store in a big glass jar. If you wish to use dates, add them here.
  5. Serve by itself, or with some natural yoghurt and berries.
