Ingredients
- 2 eggs
- ¼ cup almond milk
- 2 medium bananas, mashed
- 1/4 cup oats
- 1/2 cup Synd X protein powder
- ¼ cup desiccated coconut
- ½ cup chopped Medjool dates
- ¼ cup cacao nibs
- 2 tbsp almond butter
- Large pinch of cinnamon
Method
- Preheat oven to 180 degrees Celsius.
- Line a tray with baking paper.
- In a small bowl, mash banana with a fork.
- In a larger bowl, combine eggs, almond milk, oats, protein powder, coconut, almond butter and banana. Stir until well combined.
- Sprinkle in Medjool dates and cacao nibs.
- Use a tablespoon or ice cream scoop to roll into balls and put on baking sheet. Press down lightly with a fork. You should get approx. 15 cookies.
- Place in oven for 15-20 minutes or until lightly browned on bottom. Remove from oven and allow to cool.
