Chia, cacao and coconut bliss balls
A quick, healthy and delicious snack that can be made in advance and frozen.
Serves: Makes approx. 16 balls

Ingredients
- 12 Medjool dates, seeds removed
- 1 cup almond meal
- ½ cup shredded coconut, plus 1/3 cup extra for rolling
- 1/3 cup coconut oil, melted
- 1/3 cup cacao powder
- 1 tbsp chia seeds
Method
- Process dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds in food processor until mixture comes together. Place in a bowl and leave for 20 minutes to allow chia seeds to soften.
- Place remaining coconut on a plate.
- Roll level tablespoons of mixture into balls. Roll in coconut to coat.
- Store bliss balls in an air-tight container in fridge for optimal freshness.
