2 eggs
2 teaspoons Nature Sweet Sugar Substitute
1 teaspoon vanilla
1 cup coconut milk
½ cup gluten free self raising flour
3 cups assorted fresh berries (e.g. raspberries, blueberries, sliced strawberries)
nonstick cooking spray
Preheat oven to 200ºC. Lightly coat six small ramekins with nonstick cooking spray and arrange in a baking pan; set aside.
Combine eggs, Nature Sweet Sugar Substitute and vanilla and whisk until light and frothy. Whisk in coconut milk until combined.
Add GF self raising flour and whisk until smooth.
Divide berries among prepared ramekins, then pour batter over berries. (Note that batter will not cover berries completely.)
Bake for approximately 20 minutes or until puffed and golden brown.
Serve warm.
Suitable for those with diabetes.
Note: You may use almond or rice milk instead of coconut milk if you prefer.
