This berry and nut breakfast parfait is dairy free, healthy and delicious, plus a cinch to make. Not to mention it can be prepared in advance for a breakfast on the go.

Ingredients
- ¼ cup almonds, plus few extra to garnish
- ¼ cup macadamias
- ¼ cup walnuts
- 1 tbsp pumpkin kernels
- 1 tbsp sunflower seeds
- ¾ cup blueberries
- ¾ cup strawberries
- 4 tbsp coconut yoghurt
Method
- In a small bowl, add the nuts and seeds, mixing well to combine.
- In a separate bowl toss the berries until well combined.
- Serve in a wide bowl or jar, layering the mixed nuts and seeds, berries and coconut yoghurt, topping with yoghurt and a few extra chopped almonds to garnish.
