Avocado and sunflower salad
This light, avocado and sunflower salad is super nutritious and easy to put together, containing chickpeas for protein and the radicchio and apple cider vinegar for easy digestion.

Ingredients
- 1 avocado, sliced
- 1 tomato, chopped
- 1 tbsp basil, finely chopped
- 1 tbsp apple cider vinegar
- 2 cups radicchio lettuce, torn
- 2 tbsp sunflower seeds, freshly roasted
- ½ cup canned chickpeas drained
Method
- Arrange lettuce leaves on a serving plate.
- Arrange remaining ingredients on top of lettuce and, lastly, sprinkle with sunflower seeds.
Note: Feel free to serve with some tofu or chicken for extra protein.
Re the avocado and chickpea salad,,it says at end feel free to add tofu..but that is made from soy and earlier you said that soy can cause Graves disease (which it did to me many years ago..and when I stopped all soy products the Graves disease went away.)

We recommend that people with thyroid or autoimmune conditions avoid soy products.
Genetically susceptible people (such as those with autoimmune disease in the family) may also benefit from doing so.
On the other hand, some people tolerate soy well and don’t develop any health problems from it – we are all unique.
It’s great that you discovered that soy was harmful for you and that your health has improved since removing it 🙂
