These delicious apricot protein balls combine protein, glutamine and magnesium for the perfect post-workout snack, to nourish your muscles and replenish your electrolytes.
Makes about 20 protein balls, serving size: 2 balls
*note that magnesium can have a laxative effect if consumed in large quantities, so stick to the recommended serving.
Ingredients
- ½ cup Synd-X Protein Powder
- 4 tsp Magnesium Ultra Potent Powder Citrus
- ¼ cup Glutamine Powder
- 1 cup dried apricots, chopped
- ½ tsp cracked sea salt
- 1 cup mixed nuts (almonds, walnuts, cashews, brazil nuts)
- 4 tbsp. melted coconut oil
- ¼ cup desiccated coconut (extra for rolling)
Method
- In a food processor, add the protein, magnesium, glutamine, nuts, salt and coconut. Blend until nuts are well ground, and set aside.
- Add the apricots and coconut oil to the food processer and blend until the apricots form a thick paste.
- Add the dry ingredients back into the food processer and blend until everything is well combined. If mixture is too dry, add 1-2 tbsp. water.
- Spoon 1-2 tbsp. of mixture into your hand and roll into balls. Roll into desiccated coconut to coat.
- Store in an airtight container in the fridge. Enjoy 1-2 as a post-workout snack.Tip: Soaking the apricots in water makes them easier to blend.
Are you considering the lectin content in many foods and suggesting ways, with a pressure cooker to remove the lectins?
Hi Barbara,
Lectins are in peanuts, but not the nuts mentioned in above recipe.
