Coleslaw supreme
This coleslaw supreme recipe is a nice twist on traditional coleslaw. Store bough coleslaw contains added sweeteners and preservatives. This one uses fresh, wholefood ingredients and is loaded with antioxidants that keep our cells healthy.

Ingredients
- 2 cups cabbage, finely shredded (Savoy or Chinese)
- 1 cup red cabbage, finely shredded
- 1 medium onion, thinly sliced
- 1 cup carrot, grated or fine julienne strips
- 1 red capsicum, seeded and thinly sliced
- ½ cup parsley, roughly chopped
- 1 lemon, juiced
- Sea salt and black pepper to taste
Dressing
- ½ cup natural plain yoghurt or mayonnaise
- ¼ cup orange juice, fresh
- ¼ cup light malt vinegar
- 1 tsp hot English or seeded mustard
- Ground black pepper to taste
Method
- Toss all the salad ingredients in a bowl.
- Whisk together all the dressing ingredients and either toss through salad or serve on the side.
