Ingredients
- 2 large bunches coriander, chop leaves coarsely
- 2 garlic cloves, finely chopped
- 5cm ginger, thinly sliced
- 2 lemons, juiced
- ½ tsp turmeric
- 1 tsp paprika
- ½ tsp chilli powder (optional)
- 1 tsp cumin seeds
- 1 tsp sea salt
- 1 kg chicken thigh fillets
- 2 tbsp olive oil
Method
- Combine coriander, garlic, ginger, lemon juice, turmeric, paprika, chilli, cumin and salt, and mix well.
- Add chicken, toss well and leave in marinade for 30 minutes, stirring from time to time.
- Heat oil in pan, add chicken with marinade and cook over moderate heat until tender.
- Serve with steamed vegetables and salad.
