Ingredients
- 2 large apples, peeled and cored
- 3 tbsp lemon juice
- 1 tsp lemon rind, grated
- 1 tbsp Nature Sweet Natural Sugar Substitute
- 1 tbsp raisins
- 8 dried apricots, chopped
- 8 prunes, pitted
- 1/2 tsp cinnamon, ground
Method
- Slice apples into thin wedges. Toss in the juice.
- Arrange wedges around the edge of a casserole dish.
- Combine the juices with the rind, sweetener and dried fruits. Sprinkle through the cinnamon.
- Place this mixture through the centre of the casserole and cover with foil.
- Bake in a moderate oven for 30 minutes or until apple is tender.
- Serve warm topped with plain, full fat yoghurt.
