Healthier mashed potato
This delicious twist on traditional mashed potato will have them begging for more!

Ingredients
- 2 medium sweet potatoes, peeled and chopped roughly
- 500 g carrots, peeled and chopped
- 2 tbsp organic coconut oil, melted
- ½ tsp sea salt
- ½ tsp paprika
- Pinch of black pepper
- 1-2 tsp water or coconut milk (optional)
Method
- Preheat the oven to 220º Celsius.
- Arrange all ingredients on a lined or greased baking tray and roast in the oven until very soft and lightly browned. You may need to toss them around a couple of times while cooking.
- Once the vegetables are cooked, mash them using a stick blender. You may need a teaspoon or so of water or coconut milk.
- Blend until smooth and then serve.
