Rainbow salad bowl
This rainbow salad bowl is the perfect way to get more healthy veggies into your diet. Loaded with nutrients, flavour and colour!
Ingredients
- 1 tomato, diced
- 1 carrot, grated
- ½ yellow capsicum, seeded and diced
- 1 cup rocket
- ½ avocado, peeled, pitted and diced
- ¼ red cabbage, shredded
- ½ cup red kidney beans
- 40g Danish fetta, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
Method
Arrange all ingredients in a bowl, drizzle over the olive oil and vinegar, and enjoy!
