Jaffa protein balls

Ingredients

  • 350g medjool dates, pitted
  • 150g dairy free protein powder
  • 70g almond meal
  • 2 heaped tbsp cacao
  • 40g shredded or desicated coconut
  • 1.5 tbsp maple syrup or 1 tsp of Nature Sweet Sugar Substitute
  • 8 drops orange essential oil

Method

  1. Add medjool dates and dry ingredients to a food processor and blitz until the dates are thoroughly chopped. The moisture content in the dates can vary so to ensure the dates are chopped thoroughly you may have to vary the protein powder amount. With the processor on slow, add 8 orange essential oil drops so they blend thoroughly and slowly adding the maple syrup or Nature Sweet Sugar Substitute. The syrup should cause the mixture to clump into a single large dough ball.
  2. Use a melon baller to form balls from the mix or roll balls in your palms. Wet your hands to avoid them sticking. Roll the balls in the coconut and refrigerate until firm.
