If you are a fan of lemon curd flavoured desserts, this lemon pie chia pudding is bursting with lemon zest flavour and makes for an easy and healthy alternative to traditional desserts. Chia seeds are a nutritional powerhouse – they are a fantastic source of healthy fats, fibre and protein. They are incredibly versatile and easy to use in desserts. This pudding takes less than 5 minutes to prepare!

Ingredients
- 2 tbsp chia seeds
- ¼ tsp Nature Sweet
- Rind and juice of ½ lemon
- ½ cup coconut milk
- 1 tsp pure maple syrup
How do you stop the chia from settling at the bottom of the jar ?

Make sure you are stirring the chia seeds all the way through.
It should be setting evenly throughout the jar.
